Turkey Stuffed Peppers

Ingredients

  • 4 large green bell peppers
  • 1 pound ground turkey
  • 1 egg
  • 1 small onion chopped
  • 1.5 cups cooked rice
  • 2-8 ounce cans of favorite tomato sauce
  • 1/4 cup romano cheese
  • 1/4 cup olive oil
  • 2 cloves of chopped garlic
  • Pinch of fresh basil
  • Fresh parsley 2 tbsp
  • Salt and pepper to taste

Directions

1) Preheat oven to 375 degrees
Cut peppers in half and remove stem and seeds. Heat skillet with ½ of the olive oil and sear the bottoms of the peppers until a nice golden brown. Take out peppers and set aside.

2) Using the same skillet add remaining olive oil over medium heat with onion and garlic stirring occasionally until softened about 4 minutes.

3) In a medium bowl add turkey and rice mixing with your hands, then add sautéed onions, garlic, Romano cheese, egg, basil, parsley and salt and pepper to taste.
Mix all ingredients well and stuff each half of pepper with mixture.

4) Put 1/2 of the tomato sauce in a casserole dish and place stuffed peppers over the sauce in casserole dish add remaining tomato sauce over the peppers, cover and bake until the peppers are tender and filling is heated through about 30 to 40 minutes.

You can use any color bell pepper you want I find green have the most flavor and you can also use ground beef or pork instead of turkey. If using the pork I would add a pinch of fresh chopped rosemary.

Serve with your favorite pasta or potato and vegetable.

Don’t forget the garlic toast!!!
