Mimi's Quick and Easy Meatloaf


  • 3 pounds ground beef (93% lean)
  • 3 eggs lightly beaten
  • 1/2 cup minute rice
  • 1/2 cup of panko bread crumbs or your own
  • 2 packages of French onion soup mix
  • 1/2 cup of ketchup
  • 1-32 ounce can of brown or beef gravy
  • 2 tablespoons of Mrs. Dash table blend
  • Fresh parsley 2 tbsp
  • Salt and pepper to taste


1) Preheat oven to 375 degrees. Coat an 8.5 x 4.5 inch loaf pan with cooking spray.

2) In a mixing bowl add ground beef, eggs, rice, bread crumbs, French onion soup mix, ketchup, Mrs. Dash and parsley. Mix well with clean hands.

3) Add mixture to your baking pan and bake 50 to 60 minutes or until internal temperature is 160 degrees. Remove from oven drain any liquid in the pan and cover with half of the gravy and bake for another 20 minutes.

4) Let it rest for 10 minutes, remove from pan and slice. Top with remaining gravy that is simmered.

Best served with mashed potatoes and always makes a great sandwich the next day on fresh Italian bread.
